Fresh-herbed Sockeye salmon with fresh lemon. Served over whole wheat soba noodles with my home made Asian sauce.
Asian sauce:
* 1 TBSP low-sodium, non-GMO tamari (organic soy sauce)
* 1 TBPS Sesame oil
* 1 TBPS mirin (Chinese rice wine vinegar)
* 1 TBPS spicy garlic chili sauce
* 1 thumbnail size fresh ginger, minced
* 1 TBSP Annie’s Shiitake mushroom salad dressing
* Chopped fresh cilantro
Directions:
1) Mix all ingredients and store in refrigerator for at least 20 minutes so that ingredients have a chance to soak up all the flavors
2) Cook soba noodles, strain and add sauce, mixing thoroughly on low until all noodles are well-coated
