It seems every year I leave for the summer; I come back and everything changes….mostly restaurants. This week a friend and myself checked out the new Pieology in our town, a California based restaurant. You’ve heard of it….kind of like Subway but pizza. I didn’t have huge expectations because I was envisioning a really thick bready pizza. Turns out it was quite the opposite and it might be my favorite pizza place. Thin crust was so delicious!

Afterwards we headed over to Island Bungalow and I saw this dreamy bed. That banana leaf fabric is to die for. I am an co-owner of a homestaging business here in Kailua (there will be an announcement and details soon) and yet I just can’t get the masterbedroom right. It seems like for years I keep trying something new and it turns into a massive fail. Maybe some pieces from this set will be my next venture. I’ll keep y’all posted.

Leahi Rainbow Taco

I had a great day catching up with two fabulous friends at different times of the day while bumping into a few more along the way. So good for the soul. It’s been a crazy whirlwind of madness since I returned from the mainland. Unfortunately because of the craziness  I haven’t been a very present friend. So it was wonderful to get caught up after a long summer.

We had a great lunch at Leahi Health a plant based food and drink restaurant here in Kailua. So delicious and there is also Kombucha on tap. Yum! Exactly what I need right now. We had a combination of guava, ginger, mint, apple cider vinegar and I believe lime. Yes, you read that right. AC/DC….Apple Cider for sure I’m not sure where the DC fits in. Sounds crazy right? Well it was actually quite refreshing.

Speaking of restaurants, Tasteful Tuesday is back. I’m shopping for an upcoming fundraiser and found these four dresses at Nordstrom’s. All of which are very inexpensive. I ended up going with the green colored Leith dress. If you’ve wandered around the fashion blogger world you’ll see just how versatile this beauty is AND it’s incredibly comfortable…so comfortable I could sleep in it. Such a great wardrobe staple.

Delicious recipe from Karliin Brooks, author of Squeeze Life and the founder of The Squeeze, a cleansing and juicing lifestyle brand located in NYC.

“The Morning Delight is a hearty beverage packed with vitamins, nutrients, and healthy carbs, which is going to give you the get up and go everyone needs in the morning without the coffee crash,” says Brooks.
Morning Delight
INGREDIENTS:
11/2 cups coconut milk
1 tsp lacuma
2 tsp pure matcha tea powder
2 frozen bananas
2 to 3 dates, pitted
1 tbsp maple syrup
1/2 tsp vanilla extract OR 1 vanilla bean
Small handful of ice (optional, depending whether you froze your bananas)

DIRECTIONS:
Add the coconut milk, lacuma, and matcha to your blender and process until completely mixed. Turn off, then add the rest of your ingredients and blend until totally emulsified. If using the vanilla bean, split the bean in half and scrape out the vanilla pods.

Need some cupcakes to take to work or perhaps your child’s classmates for a St. Patty’s Day celebration? Sparkling Ice has got you covered. Try this recipe.

Sparkling Ice Cupcakes

Ingredients

Cake

1 box of white cake mix
12 oz of room temperate Sparkling Ice Lemon Lime

Icing

1 can of vanilla icing
4 drops of green food dye

Instructions

1.Preheat your oven to 350°

2.Line muffin pan with liners.

3.In a medium bowl combine your Sparkling Ice and cake mix, stirring with a whisk until most of the lumps are gone.

4.Fill each liner ½-2/3 full of batter.

5.Bake for 18-20 minutes until cupcakes are springy and toothpicks comes out clean.

6.Let cool completely before frosting.

Flatbreads
After a long school and work week, I try to take the easy route on the weekends when preparing our meals.  Rustic Crust helped me do just that for my families Friday Pizza Night! These flatbreads come in a variety of mouth watering options to choose from. Simply splash on a little Olive Oil and the delicious Old World Pizza sauce over Rustic Crust Flatbread then add all of your favorite toppings. I chose fresh tomatoes and basil with my favorite organic cheese and topped it with Feta.  For the kiddos, they just like cheese, cheese and more cheese. Bake it for about 8-12 minutes and Voila! Yum and so easy!

What I loved most about this flatbread is that it wasn’t really thick and the sides were perfectly crisp.

  • We tried the Cheesy Herb Pizza Crust (Kids favorite)
  • Sea Salt and Basil Ciabatta (Very delish)
  • Crispy Italian Thin Crust (My favorite)

Made in the USA with real natural ingredients and no GMOs or artificial preservatives. Also, unbleached whole grain flours, no trans fats and no added sugar!!

These pizzas are so easy to throw together and they are so much better not to mention fresher and healthier than frozen pizzas in my opinion.  Our whole family thoroughly enjoyed Rustic Crust Pizzas!

Kale Ingredients Resize
Smoothies are my thing. I drink them every single morning. This one I love because of the minimal ingredients it takes to throw together. It doesn’t get much easier than this! If you’re not a fan of Kale you can easily swap it out for spinach.

  • First add a cup of Kale to your blender
  • 1 Cup of Frozen Mango
  • 1 Banana
  • 1 Cup of Coconut Water (I usually add a splash more)
  • I usually add about a tbsp. of crushed Chia Seeds (optional)

A few benefits of..

  • Pineapple is an immune booster and disease fighter. Pineapple contains Bromelain which helps treat indigestion and inflammation.
  • Kale contains fiber and iron.  It’s also a powerful antioxidant.
  • Banana contains potassium and helps prevent high blood pressure.
  • Mango contains electrolyte minerals which help alkalize the body to a healthy pH balance .
  • Coconut water is super hydrating and also helps with digestions. It contains electrolytes such as magnesium, calcium, phosphorous, potassium and sodium.
  • Chia Seeds are a great energy booster packed with protein. Chia seeds contain 500% more calcium than milk.

Tzatziki Sauce

Any night can be Greek night! Perfect for those warm Hawaiian evenings paired with grilled chicken or hummus, or any party occasion – makes a great dip too!

Tzatziki Sauce:

* 1/2 cucumber
* 2 cups plain yogurt (preferably Greek – higher in protein)
* 2 TBSP chopped fresh parsley
* 2 TBPS chopped fresh mint
* 1 TBPS fresh lemon juice
* 1 clove fresh garlic, minced
* Salt and ground black pepper to taste

Prepare the Tzatziki: Peel and seed cucumber and cut into small dices. In a bowl, combine cucumber, yogurt, parsley, mint, garlic and lemon juice. Season to taste with salt and pepper. Set aside, cover and refrigerate.
