I don’t know about you all, but the school year has begun and the crazy chaos has followed. I have always struggled with that transition period from summer to school year so needless-to-say the months of August and September are full of quick and simple recipes for dinner that I don’t have to put a lot of thought into. This is one of my go-to’s that will remain on the weekly menu until around Thanksgiving time. The ingredients are super simple and you certainly don’t have to take the lazy way out like I tend to do. Note: the packaged chicken strips but this is how I roll for the first few months anyway.
- Lettuce
- Tortilla Chips (I use blue chips)
- Shredded Cheese
- Package of Southwestern seasoned chicken strips
- Ranch Dressing
- Fiesta corn or Southerwestern Style
- Your favorite salsa
I just toss everything together to your liking.
